When lunch time rolls around, I’m usually starving. I often chow down on this salad composed of tuna, mixed greens, egg, and avocado. It keeps me full until dinner and gives me the energy I need to chase after my energetic kiddos.
This flavorful tuna salad requires just a few minutes of prep time, and your kids might even like it (mine do). The lime adds a zippy zest, but it also keeps the avocado slices from browning too quickly. Not like avocado has time to brown if you shovel it into your mouth as quickly as I do.
I start by slicing a hardboiled egg with my old-school egg slicer that I’ve had for like 10 years. Feel free to use a knife if you don’t have a nifty egg slicer like this one.
After that, I arrange my mixed greens on a plate and top them with avocado, egg, and tuna. I squeeze lime juice on the tuna and avocado slices.
I top the tuna with a generous shake of Trader Joe’s 21 Seasoning Salute. It’s a salt-free seasoning, which is good news for me since I struggle with high blood pressure.

Sometimes I use olive oil for my tuna salad, but I usually use Bragg vinaigrette. The vinaigrette is pictured below.
