Instructions
  1. Slice hothouse cucumber into circles and sprinkle with salt and pepper to taste. Dice circles into small pieces.
  2. Place coconut yogurt in a medium-sized bowl, and squeeze juice from your lemon wedges over it. Sprinkle with salt and pepper, if desired. Stir ingredients gently to combine.
  3. Stir in diced cucumber and set aside.
  4. Chop mint leaves and cilantro leaves, then add to yogurt mixture. Stir gently to combine.
  5. Serve with fresh veggies, or drizzle over salad, rice, or other dishes.
