Slow Cooker Whole Chicken With Rosemary and Lemon Pepper

Friends and family members are often surprised when I tell them I’m making a whole chicken for dinner (yes, I’m that person who always talks about my meal plans and posts food pics on social media).

“Doesn’t that take forever? How do you have time to do that with toddlers running around?”

Nope, it only takes a few minutes of prep time, and then I completely forget about it while it roasts in my slow cooker. Easy peasy, as my 3 year old likes to say.

In fact, it’s so easy that he likes to help me with the seasonings and rosemary sprigs.

See the other toddler in the background? He isn’t as excited about helping me in the kitchen, especially when he’s got Mario and Luigi figurines to play with.

Okay, back to the chicken. I’m going to let you in on a little secret: I place my chicken upside down in the slow cooker for the first hour or two.

I’ve always been taught to place a whole chicken breast-side up in a slow cooker, but I’ve found it’s more likely to get dry that way. Breast meat isn’t as tender and juicy as thigh meat, so I like to start by roasting my chicken breast-side down. I rotate it once and then cover the top with more lemon pepper seasoning , lemon slices, and rosemary. Feel free to skip this step if you don’t have time to do a switcharoo halfway through the cooking process.

Oh, and don’t worry about securing the legs with twine or arranging your lemon slices like your dinner is starring on the cover of a Martha Stewart magazine. It’s practically impossible to screw up this chicken.

Notice the rosemary on the lemon slices? My son said we needed some there.

You can remove the lemon slices before you serve the chicken or leave them on there. I’ve tried both methods, but I’ve got a kid who loves lemons.

I like to serve this with fresh fruit, salad, and cheese. I’ve learned my toddlers will eat anything if it includes cheese. Bonus points for putting it on a plate with some kind of Disney character.

Instructions
  1. Drizzle 1 tablespoon of olive oil on the bottom of a slow cooker and set heat to low.
  2. Wash chicken and pat dry. Place in slow cooker.
  3. Drizzle olive oil over the chicken and coat with lemon pepper seasoning. Add lemon slices and rosemary to the top of the chicken.
  4. Heat on high for 3 to 4 hours or low for 5 to 6 hours.
Recipe Notes

Create a full meal by placing potato wedges on the bottom of the slow cooker before adding the chicken.
