Recipe for Chocolate Peanut Butter Bark With Peanut Butter Cups

I’ve never been much of a fan of chocolate on its own, but chocolate paired with peanut butter? Yes please. That’s why I love this recipe for chocolate peanut butter bark with peanut butter cups soooooo much.

Unfortunately, there are many times when I can’t eat peanut butter. I have LPR, and it causes breathing issues. When that happens, I replace the peanut butter with sunflower seed butter in this chocolate bark recipe. You can sub pretty much any type of nut butter or seed butter that you like because it’s hard to screw up this recipe.

Seriously, this is the kind of gluten-free dessert recipe you can make with your kids. It’s easier than cookies, cake, brownies, and pretty much every other type of sweet treat.

Alright, enough with the background info. Are you ready to make your own batch of chocolate peanut butter bark with peanut butter cups? Awesome!

Start by combining coconut oil, chocolate chips, and a couple tablespoons of peanut butter in a pot.

Melt over medium heat for 1 to 2 minutes, stirring constantly. Seriously, don’t walk away because this mixture burns quickly.

When your mixture becomes smooth and glossy with no clumps of unmelted chips, it’s done.

Pour the mixture into a pan lined with parchment paper and stir in the remaining peanut butter and peanut butter cups.

I use Theo Peanut Butter Cups because they’re Fair Trade, non GMO, organic, and delicious. Oh, and they were on clearance for $0.50 at Dierbergs. I’m now the proud owner of like 15 packs of organic peanut butter cups.

Okay, let’s stay focused here. Top the mixture in your pan with a pinch of sea salt. My pinch was more like a handful because I love salt. We won’t talk about my blood pressure right now.

Refrigerate for 1 to 2 hours until the bark hardens. Look at that delicious dessert. I’d totally use that emoji with the heart eyes if I was writing this post from my iPhone.

Break the bark into chunks and serve it with extra peanut butter. This isn’t a requirement. My family just likes any excuse to eat peanut butter.

Instructions
  1. Combine coconut oil, chocolate chips, and 2 tablespoons of peanut butter in a pot over medium heat. Stir frequently with a spatula until mixture becomes smooth and glossy.
  2. Pour mixture into a 13 x 9 pan lined with parchment paper. Stir in remaining 6 tablespoons of peanut butter, then add peanut butter cups.
  3. Sprinkle with sea salt and refrigerate for 1 to 1 hours.
  4. Break refrigerated bark into pieces with your hands, or cut it with a knife. Serve immediately; the coconut oil makes it melt fast.
