Well, you’ve come to the right place. These quick and easy vegan nachos are topped with mashed sweet potatoes instead of artery-clogging cheese, and I think you’re going to absolutely love them (and if you don’t, I’ll eat your share).
I’m going to share my super-simple recipe for vegan nachos below, but I’m also going to explain how you can customize this savory snack. I enjoy sharing my recipes with you, but I know there’s a certain joy that comes from creating your own culinary masterpiece. I won’t deprive you of that.
You need a few basic ingredients for these nachos: Tortilla chips (or something similar), mashed sweet potatoes, salsa, green onions, and cilantro. That’s it.
I also recommend salt, pepper, and garlic powder, but you can skip those ingredients if you want. I’m including them in my recipe below, but these vegan nachos taste fine without them.

Alright, enough about that. Let’s focus on the actual recipe for simple vegan nachos right now.
Start by preparing your mashed sweet potatoes. I find it easiest to boil some frozen sweet potato cubes in a covered pot for 3 to 5 minutes and then mash them with my fork. Alternately, you can bake sweet potatoes in the oven for approximately 60 minutes at 400 degrees and then mash them with a fork.
After your sweet potatoes finish cooking, arrange some tortilla chips on a plate or in a bowl.
Top them with a generous amount of mashed sweet potatoes.
If you have a soup ladle, use that instead of the crappy plastic spoon I used in the photo. It’ll make your life easier.
Add the rest of your toppings to the vegan nachos. The finished product will look something like this:
Transport the nachos to your guests or family members. Try not to eat any along the way.
Just kidding. Dig in immediately and then act surprised when they ask why half of the nachos are gone.
