Quick and Easy Vegan Nachos With Mashed Sweet Potatoes

There are tons of amazing recipes for loaded vegan nachos on Pinterest and similar sites, but what if you just want a basic nacho recipe that takes less than 10 minutes to prepare?

Well, you’ve come to the right place. These quick and easy vegan nachos are topped with mashed sweet potatoes instead of artery-clogging cheese, and I think you’re going to absolutely love them (and if you don’t, I’ll eat your share).

I’m going to share my super-simple recipe for vegan nachos below, but I’m also going to explain how you can customize this savory snack. I enjoy sharing my recipes with you, but I know there’s a certain joy that comes from creating your own culinary masterpiece. I won’t deprive you of that.

You need a few basic ingredients for these nachos: Tortilla chips (or something similar), mashed sweet potatoes, salsa, green onions, and cilantro. That’s it.

I also recommend salt, pepper, and garlic powder, but you can skip those ingredients if you want. I’m including them in my recipe below, but these vegan nachos taste fine without them.

Alright, enough about that. Let’s focus on the actual recipe for simple vegan nachos right now.

Start by preparing your mashed sweet potatoes. I find it easiest to boil some frozen sweet potato cubes in a covered pot for 3 to 5 minutes and then mash them with my fork. Alternately, you can bake sweet potatoes in the oven for approximately 60 minutes at 400 degrees and then mash them with a fork.

After your sweet potatoes finish cooking, arrange some tortilla chips on a plate or in a bowl.

Top them with a generous amount of mashed sweet potatoes.

If you have a soup ladle, use that instead of the crappy plastic spoon I used in the photo. It’ll make your life easier.

Add the rest of your toppings to the vegan nachos. The finished product will look something like this:

Transport the nachos to your guests or family members. Try not to eat any along the way.

Just kidding. Dig in immediately and then act surprised when they ask why half of the nachos are gone.

This is also a great time to make comments like “Well, when you decide to prepare a tasty meal from scratch, then you can eat half of it on your own.” No need to tell your loved ones that these vegan nachos only take about 7 minutes from start to finish (unless you bake your sweet potatoes in the oven). Let them think you worked super hard to make these.

Instructions
  1. Add approximately 1/8 cup of water to a pot and bring to a boil. Add cubed sweet potatoes and garlic powder, then stir gently. Cover and heat for 3 to 5 minutes.
  2. Remove lid from pot, and drain water if needed. Mash sweet potatoes with your fork. Season with salt and pepper, if desired.
  3. Arrange tortilla chips on multiple plates or in a large bowl. Top with mashed sweet potatoes, salsa, green onions, and cilantro. Enjoy!
