That’s fabulous news for you if summer break is rapidly approaching and you have children like mine who want to eat 24/7. I guess all that fresh air and sunshine makes them super hungry. Who knows.

Now that we’ve gotten that out of the way, let’s talk about these apple slices with peanut butter, coconut flakes, and chocolate chips again. I’m super picky about my chocolate chips, so I use the mini version of Enjoy Life chocolate chips. These mini chocolate chips are vegan and non GMO, which is awesome. I buy them at Target, but you can also get them from Amazon.com.
Here’s what they look like:
I use the mini chips for this recipe, but the company also makes regular chocolate chips and chunks of chocolate. The chocolate chunks are amazzzzzing in peanut butter cookies, but let’s try to stay on topic here.
Okay, grab your peanut butter, a couple apples, some coconut flakes, and plenty of chocolate chips. You’ll also need a knife and a cutting board.
Core your apples and cut them into circles. You can also cut each apple into avocado-style slices, but my kids prefer the circles. It makes it easier for them to pretend they’re eating cookies.
Using a spoon or knife, smear a generous amount of peanut butter onto each apple slice.

Sprinkle coconut flakes and mini chocolate chips on the peanut butter. Beautiful.
