  1. Preheat the oven to 350 degrees Fahrenheit and lightly spray a 9 x 13 baking pan with coconut oil.
  2. Combine carrots, coconut, and pineapple in a large bowl. Mix to combine, then add applesauce, vanilla extract, and beaten eggs.
  3. Add remaining ingredients to the batter and stir well. Pour batter into the 9 x 13 baking pan.
