Combine peanut butter, honey (if using), and brown sugar in a mixing bowl. Stir until well combined.
Add baking soda, sea salt, and egg. Beat until the cookie dough becomes thick and glossy.
Add chocolate candy and mix gently to combine.
Refrigerate dough for at least 1 to 2 hours. If you skip this step, your cookies will spread like crazy during the baking process.
Lightly spray a cooking sheet with coconut oil, if desired (if you use a really oily peanut butter, you might be able to skip this step). Place 6 to 8 cookies on a tray.
This recipe makes 8 to 10 cookies.
Bake at 350 degrees Fahrenheit for 9 or 10 minutes. Your cookies won’t look done when you take them out, but let them cool for a bit and they’ll be fine.
Top with a dash of sea salt and enjoy!
